Chocolate Cake in a Mug
*adapted from The Book of Veganish
1/4 cup sugar
1/4 cup unbleached all purpose flour
2 TB cocoa powder
2 TB vegetable oil (safflower or sunflower)
Pinch of salt
2 TB water
2 TB dairy free chocolate chips
Sprinkle of chopped pecans, optional
Mix all ingredients in a wide coffee mug or soup bowl (at least 16 oz). Microwave on high for 1 min.
